Souvlakia is a street food that you can find all over Cyprus! Traditionally, they are made with chicken or pork, but my vegan version is made with tofu. They are served with pita bread and several condiments, salad and fries.
Purekkia is a Cypriot pastry dessert, traditionally stuffed with anari cheese (fresh mild whey cheese). For my vegan version I'm using silken tofu, that resembles perfectly the texture of anari!
Today we are making a mushroom & walnut ragu, it’s simple to make and if you have a food processor it’s even easier, but don’t worry you can make it even without it!
