Easy hot stir fry

This stir fry is extremely easy to prepare and it's packed with flavour!

Vegan, nut free | Serves 2 | MAIN


  • 250g firm tofu, cut in cubes
  • 1 tablespoon of olive oil
  • 1 carrot, shredded
  • 120g red cabbage, finely sliced or shredded
  • 120g sugar snap peas, sliced
  • 2 spring onions, sliced
  • Basmati rice, cooked
  • Fresh coriander, sliced


  • 2 tablespoons of each olive oil and sriracha (hot sauce)
  • 1 tablespoon soy sauce
  • 30ml water
  • 1 teaspoon maple syrup
  • 1-2 cloves of garlic, crushed
  • Salt and pepper



1.If your tofu is not already pressed, press it as shown in the video below.

2.In a wide pan, on a hight heat, add the oil, along with the tofu cubes in one layer.

3.Sauté until all sides are golden, 2-3 minutes on each side.

4.Add the carrot, cabbage, sugar peas and spring onions with a pinch of salt and sauté for a couple of minutes.

5.Add the cooked basmati rice and combine well, before you add the sauce.

6.Stir and cook for 3 more minutes.

7.Serve with fresh coriander.
