Yellow split peas
This is quick and simple recipe, made with only few staple ingredients.
Vegan, soy free, soy free | Serves 3 | MAIN
Ingredients:
- 200g yellow split lentils, thoroughly rinsed
- 1 vegetable bouillon cube
- 1 bay leaf
- 3 tablespoons of olive oil
- 1 medium size onion, peeled and finely diced
- 2 garlic cloves, peeled and finely diced
- 1/2 teaspoon of oregano
- 1/4 teaspoon of curry powder
- 1/4 teaspoon of Dhow Nature Foods turmeric (10% discount code: DHOWLIKENATALI)
- Pinch of chili flakes
- Salt and pepper to taste
Steps:
In a medium pot add the peas on a medium high heat, 500ml of water, the veggie cube and the bay leaf.
Bring to boil, lower the heat and simmer for 20 minutes or until the peas are breaking.
Stir occasionally and discard any foam that might appear on top. Most of the water should be evaporated by the end.
In a small pot add the oil on a medium low heat and add the onions and garlic and sauté until soft.
Sauté for about 10 minutes or until golden.
Add the onions and oil in the peas along with the rest of the spices and cook for additional 10 minutes.
Remember to season it before serving.
I like to serve it with aromatic basmati rice, some fresh coriander and an onion and tomato salad.
