Yellow oyster mushroom sandwich

Few weeks ago, I got myself a yellow oyster kit to grow a mushroom in my house and I really enjoyed it! I was late 1-2 days in cutting the mushrooms, but nonetheless they tasted amazing, so today I'll show what I made with them :)

Vegan, nut free, soy free, gluten free | Serves 2 | MAIN

  • 200g oyster mushrooms (I used yellow)
  • Oil for frying

  • 200g breadcrumbs
  • 50g sesame seeds
  • 1/2 teaspoon each smoked paprika, garlic granules and dried parsley

  • 150g flour
  • 1 tsp baking powder
  • Salt & pepper
  • 1/2 teaspoon each dried oregano, paprika, garlic granules, dried parsley and chili flakes
  • 250g water

Serve with:

  • Bread of your choice (I using a seeded whole wheat baguette)
  • Sweet chilli
  • Vegan mayonnaise
  • Green leaves
  • Spring onions, chopped
  • Avocado

1.In a large mixing bowl, add all the coating ingredients and whisk to combine well.

2.In a separate large mixing bowl, add all the ingredients for the batter, and whisk well to combine.

3.If your mushrooms are too big, cut them in the middle, and then coat each piece in the batter then cover it with the breadcrumb mix.

4.Continue, until you have coated all the mushrooms.

5.Heat the vegetable oil in a shallow pan or pot and once the oil is hot, add few pieces carefully. Fry them for 3 minutes on each side or until golden brown.

6.Fry them in batches, as you don't want to overcrowd the pan.

7.Once they are cooked, place them on a plate with some kitchen paper to absorb any excess oil and sprinkle some salt.

8.Optionally you can coat the mushrooms in some sweet chili sauce. In a large bowl, add the mushrooms along with 3-4 tablespoons of sweet chili sauce and mix to coat them.

9.Serve in toasted bread, with vegan mayo, some greens, avocado slices and the mushrooms.

*Use gluten free breadcrumbs and bread, if you want to avoid gluten.

*This recipe makes enough for 2 sandwiches and you will have some mushrooms extra to enjoy on the side.
