This is my take on a traditional Greek side dish, which is served in all taverns all over Greece.
Vegan, nut free | Serves 4 | SIDE
Ingredients:
- 250g of firm tofu, cut in rectangles
- 100ml of vegetable oil, for frying
- 4 filo pastry sheets, cut in 4 equal pieces
- 1 tablespoon of olive oil
- 2-3 tablespoons of maple syrup (or other sweetener of your choice)
- 1 tablespoon of sesame seeds
Marinade:
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of olive oil
- 1/2 teaspoon of white miso paste
- 7 tablespoons of soy milk (or other of your choice)
- Juice of 1 lemon
- Pinch of salt, pepper, oregano and garlic granules
- 1 bay leaf
Steps:
Mix the marinade ingredients in a bowl and add in the tofu. Coat well and refrigerate overnight.
Add each piece of tofu in the middle and bottom of each filo sheet and fold the sides inwards.
Brush the edge of each sheet with olive oil to make it stick.
Heat the vegetable oil in a shallow pan, on a medium heat and fry them. Add few of them at a time and fry until golden brown, this will only take a couple of minutes.
Place them on a plate with lined kitchen paper to absorb any excess oil.
Serve with maple syrup and sesame seeds and enjoy hot.
