Delicious and easy sun-dried tomato hummus!
Vegan, nut free, soy free | Serves 2 | DIP
Ingredients:
- 130g chickpeas (drained weight), drained and washed
- 3 sun dried tomatoes, from jar
- 1 clove of garlic
- 2 tablespoons sun dried tomato oil
- 1/2 teaspoon tahini
- 1/2 teaspoon of each paprika and oregano
- Pinch of salt, garlic granules and chilli flakes
- Juice and zest of 1/4 lemon
- 4-5 tablespoons of ice-cold water
Steps:
1.In a food processor add all the ingredients, except from the water and blend.
2.Stop and scrape the edges of the food processor as needed.
3.Add the ice-cold water in batches and blend until smooth.
4.Garnish with a splash of sun-dried tomato oil, some chilli flakes and lemon zest.
