Spanish inspired butter beans with a delicious tomato sauce!
Vegan, nut free, soy free | Serves 2 | MAIN
Ingredients:
- 1 tablespoon of olive oil
- 1 red onion, chopped
- 3 cloves of garlic, chopped
- 4 sundried tomatoes
- 2 tablespoons of tomato paste
- 1 vegetable cube
- Salt and pepper
- 1/2 teaspoon of each paprika, chilli flakes and oregano
- 2 x 230g butter beans (drained weight), drained and washed
- Fresh thyme and parsley
Steps:
In a pot, on a medium heat, add the olive oil and onion and sauté until translucent.
Add the garlic and sundried tomatoes and sauté for a couple more minutes.
Add the tomato paste, vegetable cube and herbs and stir.
Add 300ml of boiling water and stir to dissolve the veggie stock.
Simmer for 5 minutes, then blend the tomato sauce in a blender until smooth. Add the tomato sauce back in the pot, along with the butter beans and stir to coat.
Cook for 10 minutes on a medium heat.
Add the fresh thyme and parsley and adjust the seasoning to your preference.
Serve with toasted bread.
