Spanakorizo

Spanakorizo is a Greek dish with spinach and rice, it's simple to make and it bursts with flavour!

Vegan, nut free, soy free, gluten free | Serves 2 | MAIN

Ingredients:

  • 1 onion
  • 1 spring onion
  • 1 clove of garlic
  • 1/2 leek stick
  • 3 tablespoons olive oil
  • Salt and pepper
  • 250g spinach (fresh or frozen)
  • 1 tablespoon tomato paste
  • 1 veggie cube
  • 1/2 teaspoon oregano
  • 130g basmati rice
  • A handful of fresh (or frozen) dill
  • 1/2 lemon

Steps:

1.Finely slice the onions, spring onions, leeks, and garlic.

2.In a pot on a medium-low heat, sauté the veggies with the olive oil and a pinch of salt until they softened (8-10 minutes), stirring occasionally.

3.Add the spinach with a pinch of salt and sauté for 3-4 minutes, before you add the veggie cube and tomato paste.

4.Stir to mix the ingredients and sauté for a couple for minutes.

5.Add the rice, season well with salt, pepper, and oregano, give it a good stir and add 300ml boiling water.

6.Add the dill, lower the heat, cover, and cook for 10 minutes.

7.The water must be absorbed, and the rice must be cooked by now.

8.Add some lemon juice and serve with feta.
