Quinoa, mango and tofu salad

You only need 20 minutes from start to finish to enjoy this gorgeous salad! It’s packed with protein with the fajita tofu and oh my goodness the mango makes it super fresh and perfect for the summer🥭start adding fruits to your salads people 😃

Vegan, nut free, gluten free | Serves 2 | SALAD

Ingredients:

  • 90g quinoa
  • 240g firm tofu
  • 2 tablespoons olive oil
  • 1 tablespoon tamari (or soy sauce)
  • 1 teaspoon fajita seasoning
  • Pinch of dried garlic
  • Salt and pepper
  • 1/2 teaspoon corn flour
  • 1 spring onion, chopped
  • A handful of fresh coriander, chopped
  • 1 mango
  • 1/2 lime

Steps:

1.Add the quinoa in a pot with a pinch of salt and 200ml of boiling water.

2.Bring to boil, lower the heat and cover and cook for 15-20 minutes.

3.Cut your tofu in bite size cubes and set aside.

4.In a container, add the olive oil, tamari, fajita seasoning, garlic, salt, pepper and corn flour.

5.Combine well and add in the tofu cubes.

6.Mix well to coat and bake in a preheated oven at 180°C for 20 minutes, turning halfway through.

7.In the meantime, cut the mango in bite size cubes.

8.Once the tofu and quinoa are cooked add them in a bowl, along with the mango, coriander and spring onions.

9.Drizzle some lime juice, combine well and enjoy!

Notes:

*You can instead sauté the tofu in a pan for few minutes.
