Peanut butter energy balls

These balls make the perfect snack if you want something sweet and healthy.

Vegan, soy free, refined sugar free | 8-10 | SNACK

Ingredients:

  • 150g oats
  • 250g dates
  • 1 tablespoon smooth peanut butter

Steps:

1.Remove the seeds from the dates and add them in a bowl, cover with hot water for few minutes.

2.Add the oats in a food processor and blend until you get a flour mixture.

3.Add the oat flour into a mixing bowl.

4.Your dates must have softened by now, drain the water and blend them in the food processor.

5.Add the oat flour and peanut butter and blend until everything is well combined.

6.You might need to stop and scrap the sides of the food processor.

7.If your mixture is too dry, add splashes of water and blend again.

8.Shape into small balls and store in an airtight container in the fridge.

Notes:

*If you are using medjool dates, you can skip the soaking part.

*You can use crunchy peanut butter if you prefer.
