Flogeres - Veggie Flutes

Are you looking for the perfect side dish? Look no further, as these delicious FLOGERES will blow your mind!

Vegan, soy free | Serves 4 | SIDE

Ingredients:

  • 2 bell peppers, julienne (red & yellow)
  • 1 courgette (zucchini), cut in coins
  • 2 cloves of garlic
  • 2 tablespoon olive oil
  • Salt and pepper
  • 1/2 teaspoon of each oregano and garlic granules
  • 6-7 sundried tomatoes
  • 1 tablespoon nutritional yeast
  • Zest of 1 lemon
  • 3 tablespoons of wheat bulgur
  • 2 tablespoons of pine nuts
  • Fresh parsley, chopped

To assemble:

  • 14 filo sheets
  • Olive oil

Steps:

1.Preheat the oven at 180°C.

2.In a baking tray add the bell peppers, courgette and garlic cloves (whole), along with 1 tablespoon of olive oil and the spices. Bake for 25-30 minutes, turning halfway through.

3.Once the veggies are cooked, set them aside until we prep the marinade.

4.In a food processor, add the roasted garlic cloves, sundried tomatoes, remaining of olive oil, nutritional yeast, and the lemon zest. Blend until you get a smooth paste (add a little bit more oil if needed).

5.Add the paste in a bowl, along with the cooked veggies, bulgur wheat and mix well. Let the mixture aside to cool down, at least for 30 minutes.

6.Add the pine nuts and parsley into your mixture.

7.At this stage you need to preheat the oven again at 180°C.

8.Unroll the filo sheets, you can either do short rolls or long ones. However, make sure to use double filo sheets for each roll and to roll them tight.

9.If you make long ones, you will get 7, and if you cut them in the middle, you will get 14 (divide the filo sheets in the middle).

10.Once you are ready to assemble, you need to be fast. Sprinkle some olive oil on the first sheet, then add the other sheet on top and add more olive oil (do not brush the oil, just sprinkle). (Keep the rest of the filo sheets covered with a slightly wet kitchen towel, not to get dry)

11.Fill each roll with 2-3 tablespoons of the mixture, roll them like cigars and place them on a baking tray lined with parchment paper.

12.Bake for 30-35 minutes until golden brown.
