Festive salad

Are you looking to have a vegan Christmas, and you don't know where to start from? Don't worry, as I got you covered. This December, I'll be sharing 3 festive recipes that will be perfect for the Christmas table!

Vegan, soy free, gluten free | Serves 4 | SALAD

Ingredients:

  • 100g quinoa
  • 200g sweet potatoes
  • 1 tablespoon of olive oil
  • Salt and pepper
  • 50g pecans (or walnuts)
  • 2 spring onions
  • 1 fennel
  • 50g pomegranate seeds
  • 100g fresh spinach
  • Few dill leaves

Balsamic vinaigrette:

  • 60ml olive oil
  • 30ml balsamic vinegar
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper
  • 1/2 teaspoon of each ginger, garlic granules, oregano
  • 1/3 teaspoon chili flakes (optional)

Steps:

1.Start off by cooking the quinoa, according to the package instructions.

2.Peel the skin of the sweet potato and cut it in cubes.

3.Season with salt and add the olive oil and bake in a preheated oven, at 180°C for 20 minutes.

4.In a pan toast the nuts for 2-3 minutes, be careful not to the burn them!

5.Chop the nuts, spring onions, fennel, spinach and dill and add them in a large mixing bowl, along with the pomegranate seeds.

6.Prepare the dressing by mixing all the ingredients well.

7.Once the quinoa and sweet potatoes are cooked, let them cool down for 10 minutes, before you add them in the mixing bowl.

8.After 10 minutes, add the sweet potatoes, quinoa and the dressing into the rest of the ingredients and mix well to combine.

Serve and enjoy!
