Bulgur pilaf

Bulgur pilaf or purkuri as we call it in Cyprus, is a staple food of the Cypriot cuisine.

Vegan, nut free, soy free | Serves 3 | MAIN

Ingredients:

  • 1 onion, chopped
  • 1 tablespoon of olive oil
  • 500ml boiling water
  • 1 vegetable cube
  • 225g bulgur wheat
  • 1 vermicelli nest
  • 4 tablespoons of tomato passata
  • Salt and pepper
  • 1/2 teaspoon of oregano

Steps:

1.In a pot sauté the onion in the olive oil, on a medium low heat, until translucent, stirring occasionally.

2.In the meantime, dissolve the veggie cube in the water.

3.Add the bulgur and crash the vermicelli nest in the pot with the onions, give it a stir and a add all the remaining ingredients.

4.Stir, bring to boil, lower the heat and, cover and cook for 10 minutes.

5.After 10 minutes, the water must have evaporated, and the pilaf must be ready.

6.Fluff it up and serve it with plant-based yogurt.
