Banana bread

Delicious and easy banana bread recipe, ideal with coffee or tea!

Vegan, nut free | Serves 10- 12 | DESSERT

Ingredients:

Dry ingredients:

  • 260g self-raising flour
  • 1 teaspoon of cinnamon
  • Pinch of salt
  • 50-100g chocolate chips (optional)

Wet ingredients:

  • 1 tablespoon of chia seeds
  • 325g ripe bananas (2-3 bananas depending on the size)
  • 1 teaspoon vanilla extract
  • 80ml vegetable oil
  • 100ml soy milk
  • 140g granulated sugar

Decorate (optional):

  • 1 banana, cut in half lengthwise
  • Pinch of brown sugar

Steps:

  1. Preheat your oven to 180°C.

  2. In a small bowl add the chia seeds with 3 tablespoons of water, mix and let aside until you prepare the rest of the ingredients.

  3. In a bowl, sieve the flour, cinnamon and salt and let aside. In separate bowl, add the bananas and mash them with a fork or a potato masher.

  4. Add the vanilla extract, vegetable oil, milk and sugar and combine well. The texture of the chia seed mixture must be like jelly by now. Add this to the wet mixture and stir to combine.

  5. Add the dry ingredients in the wet and if you are using chocolate chips add them now on top on the flour mixture.

  6. Combine as little as possible and add in a greased loaf tin (14x24cm).

  7. If you are decorating, add the extra banana on top, push slightly down and sprinkle some brown sugar to caramelize the banana.

  8. Bake for 45-50 minutes or until a knife comes out from the middle clear.
