Summer in a scoop! This 3-ingredient strawberry ice cream is bursting with flavour and ridiculously easy to make.
Vegan, nut free, gluten free | 8 scoops | DESSERT
Ingredients:
- 1/2 lemon (unwaxed)
- 120g sugar
- 300g frozen strawberries
Steps:
1.Remove the pits from the lemon and cut it in small pieces (keep the skin on).
2.In a food processor or blender, add the lemon pieces and sugar and blend until you get a thick paste.
3.Then add the strawberries and blend until everything is smooth.
4.Transfer in a freezer friendly container, cover and add freeze for at least 2 hours before you serve.

*If you like your ice cream really sweet, add a 20-30g more sugar.
