Healthy Snickers bars

Today we are making the viral snickers bark, which I have been seeing for some time now all over the internet, and let me tell you, it's worth all the buzz!!!

Vegan, soy free, gluten free, refined sugar free | 12 pieces | SNACK

Ingredients:

  • 15 Medjool dates
  • 70g (salted) peanuts
  • 230g 70% (or higher) dark chocolate
  • 200g peanut butter

Steps:

1.Remove the pits from the dates and place them on a tray lined with parchment paper.

2.Use the bottom of a glass along with some parchment paper to flatten the dates in order to create a base.

3.Then spread the peanut butter on top of the dates, in an even layer.

4.Sprinkle the peanuts and cover with the melted chocolate.

5.To melt the chocolate crumble the chocolate into a bowl and place it over a pot with boiling water (the bowl shouldn't be touching the hot water!), creating a bain-marie. Reduce the heat and wait for the chocolate to melt and remove from the heat.

6.Alternatively, melt the chocolate in a microwave. Add the chocolate in a bowl, cover with clean film and add in the microwave for 30 seconds at 800w. Remove, check if it has melted, if not add for additional 30 seconds. Be careful not to burn the chocolate.

7.Optionally, sprinkle some flaky salt on top of the chocolate.

8.Place into the freezer for a couple of hours to set, then cut into 12 pieces.

*Store in an air-tight container in the fridge for up to 10 days.
