Ground 'beef' tortilla wraps

These tortilla wraps are simple to make and ideal for a quick lunch or dinner.

Vegan, nut free | Serves 2 | MAIN

Ingredients:

  • 1 onion
  • 2 bell peppers, (I used 1 red and 1 yellow)
  • 1 clove of garlic
  • 100g mushrooms of choice (I used button)
  • 2 tablespoon of olive oil
  • 220g vegan mince (I used Vivera plant mince)
  • 1 tablespoon of tomato paste
  • 1 tablespoon of soy sauce
  • 1/2 teaspoon of each garlic granules, dried parsley, paprika, oregano
  • Salt and pepper
  • 5 tortilla wraps
  • 3 tablespoons of tomato passata
  • 50g of grated cheese (I used Violife)

Steps:

1.Preheat your oven to 180°C.

2.In a food processor add the onion, garlic, peppers and mushrooms and blitz.

3.Add the mixture in a pot, on a medium heat with the oil and sauté for 8-10 minutes.

4.Add the mince, all the dried herbs, tomato paste, soy sauce and sauté for a couple of minutes.

5.Season and remember to taste.

6.Divide the mince mixture in the tortillas and wrap them.

7.Add them in the baking tray, and cover with the tomato sauce and cheese.

8.Bake in the oven for 10 minutes or until the cheese has melted.

9.Serve with yogurt.
