Crunchy peanut salad

Today we are making the most delicious crunchy peanut salad ๐Ÿ˜‹ itโ€™s a complete meal and itโ€™s packed with flavours, goodness plus itโ€™s creamy and crunchy at the same time! ๐Ÿ‘Œ๐Ÿผ

Vegan | Serves 2 | SALAD

Ingredients:

  • 200g purple cabbage
  • 1carrot
  • 2 spring onions
  • A handful of fresh coriander leaves
  • 100g cooked quinoa
  • 50g salted peanuts, crushed
  • 100g edamame, boiled

Dressing:

  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tbsp maple syrup
  • 1 tablespoon lemon juice
  • 60g smooth peanut butter
  • 1 clove of garlic
  • 1 small piece of ginger
  • 2-3 tablespoons of water

Steps:

1.Thinly slice the cabbage, julienne the carrot and cut the spring onions.

2.In a large bowl, add all the ingredients.

3.In a food processor or blender, add all the dressing ingredients and blend until everything is well combined.

4.Add the half of the dressing in the bowl and combine well.

5.Serve with some of the dressing on top, extra peanuts and coriander.
