This January, I'm kicking off a new series: Batch Breakfast! Each week, I'll share a recipe that allows you to prepare delicious breakfasts in advance, making your mornings stress-free. To start, we're making this delicious chocolate granola. It requires minimal effort and delivers maximum flavour. Enjoy a week of easy and delicious breakfasts!
Vegan, soy free, gluten free | 8 servings | BREAKFAST
Ingredients:
Dry:
- 40g cashews
- 40g almonds
- 200g oats
- 80g pumpkin seeds
- 2 tablespoons of each chia seeds and sunflower seeds
- 40g almonds flakes
- 1 tablespoon cacao powder
- A pinch of salt
Wet:
- 120g maple syrup
- 50g coconut oil
- 1 tablespoon vanilla extract
Toppings:
- 50g dark chocolate
- 70g dried cranberries
Steps:
1.Roughly chop the nuts and add them in a large mixing bowl, along with the rest of the dry ingredients and combine well.
2.Then add the wet ingredients and mix well.
3.Spread the mixture on a single layer, in a baking tray lined with parchment paper and bake in a preheated oven at 170°C for 20 minutes, turning halfway through.
4.Once it's baked, let it cool down completely, this will help it harden even more.
5.Then stir through the toppings and store it in an airtight container or jar for up to 3 weeks.
6.Serve with plant-based yogurt or milk and fruits.
