Baklava rolls

Baklava rolls, rich and full in flavour, made with walnuts, pistachios, layers on filo pastry and covered in syrup.

Vegan | Serves 8- 10 | DESSERT

Ingredients:

For the syrup:

  • 130g sugar
  • 130ml water
  • Peels of 1 orange
  • 1 tablespoon of rose water

For filling:

  • 120g walnuts
  • 60g pistachios
  • 2 tablespoons of rose water
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon ground cloves

To assemble:

  • 150g vegan butter (I used Flora buttery)
  • 7 filo sheets

Steps:

1.Start with the syrup, as it needs to be cold in order to use it. In a small pot, add all the ingredients, except from the rose water.

2.Add on a medium heat and bring to boil.

3.After few minutes of boiling the sugar must have dissolved and the syrup must be clear, this is when is ready.

4.Remove from the heat, add the rose water, stir and set aside to cool down.

5.For the filling add all the ingredients in a food processor and blend for few seconds, until you get small pieces. Add the filling in a bowl and set aside.

6.Melt the butter in a microwave for 30-40 seconds or in a saucepan.

7.Preheat your oven to 160°C and grease a (28x20cm) baking tray with some of the melted butter.

8.Stack the filo sheets on top of each other and cut them in three rows that are approximately 3cm wide across.

9.Keep few sheets of filo pastry and add the rest under a damp towel, so they don't get dry.

10.Use a brush to sprinkle some melted butter, then sprinkle 2 teaspoons of the nut filling and roll and fold the sides inwards. Make sure that there is melted butter on the side, so that it sticks.

11.Place your baklava roll on the baking tray, with the sealed side at the bottom and brush with butter. Continue until you have used all the sheets and filling.

12.Add any remaining butter on top and bake for 45-50 minutes or until golden brown.

13.Once cooked, remove from the oven and add the cold syrup, make sure that the syrup is cold and the baklava is hot!

14.Let aside for at least 30 minutes to absorb all the syrup and serve when it’s completely cold.
