Yogurt tofu

For this week’s recipe, I’m sharing my Yogurt Tofu, think pillowy soft tofu cubes marinated in a spicy and tangy yogurt blend. I'm also showing you two delicious ways to enjoy it! It's fantastic for meal prep and perfect for keeping in your weekly rotation as an easy, satisfying breakfast or lunch.

Vegan, nut free, sugar free | Serves 5 | SIDE

Ingredients:

  • 540g firm tofu
  • 150g plant-based yogurt
  • 1 teaspoon of each curry powder, turmeric, chilli flakes, garlic granules, oregano
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1/2 lemon, zest and juice
  • 2 tablespoons nutrition yeast

Steps:

1.Cut the tofu in bite size pieces and set aside.

2.In a large bowl, add the yogurt along with all the spices, lemon and oil and whisk to combine.

3.Add the tofu pieces, and the mix in carefully.

4.Store in airtight container in the fridge to marinate for at least 30 minutes.

5.Bake in an air-fryer for 10 minutes or in the oven for 20 minutes at 200°C, turning half way through.

6.Serve in a rice bowl, with some vegan kimchi and spring onions or make a breakfast sandwich by spreading some plant-based butter in a baguette (or other bread of choice), the tofu and some wild arugula.

Notes:

*Store the marinated tofu in the fridge for up to 3 days.
