Strawberry jam

Strawberry season has officially arrived in Cyprus, and I can’t think of a better way to preserve these gorgeous berries than by making homemade jam! It’s a surprisingly easy process, and the result is so incredibly rewarding. There’s nothing quite like the scent of simmering strawberries filling your kitchen!

Vegan, nut free, soy free, gluten free | 1kg | JAM

Ingredients:

  • 1kg fresh strawberries
  • 1 teaspoon bicarbonate soda
  • 500g sugar
  • 1 cardamon pod
  • 1 star anise
  • 1 lemon, juice

Steps:

1.Add the strawberries in a large bowl, along with the bicarbonate soda and cover with water.

2.After 5-15 minutes of soaking, rinse them well.

3.Remove the green part and cut them into pieces, place them in a large pot.

4.Then add the sugar and the spices and mix well.

5.Cover the pot and place it in the fridge overnight.

6.The next day, remove the spices and cook the jam over low heat for 30-40 minutes, stirring occasionally.

7.At the end, add the lemon juice bring to boil and then turn off the heat.

8.While the jam is getting cooked, sterilize your jars. The jars must be very well washed.

9.Add the jars and lids in a pot with boiling water on a medium heat and boil them 10 minutes.

10.After 10minutes, remove carefully both the jars and the lids and place them upside up on clean kitchen towel.

11.Once the jam is ready, use a hand blender to blend it.

12.Carefully fill your jars almost until the top and cover.

13.Let them cool on the counter upside down.

14.Store them in a dry and cool cupboard, once you open store in the fridge and consume within a month.
