Christmas tradition meets healthy living! Today we’re making a raw version of Melomakarona using dates as our natural sweetener. These are completely bake-free, packed with nutrients, and carry all the festive spices we love. It’s the perfect guilt-free treat for your holiday table!
Vegan, refined sugar free, gluten free | 28 pieces | DESSERT
Ingredients:
- 100g walnuts
- 100g almonds
- 400g pitted Medjool dates
- 20ml cognac
- 1/2 teaspoon cinnamon
- 1/3 teaspoon nutmeg
- A pinch of salt
- Zest of one orange
- 200g dark chocolate (85%)

Steps:
1.Add the nuts in a food processor and pulse them few times until you get small pieces, set aside a couple of teaspoons for decoration.
2.Add all the remaining ingredients in the food processor, besides the chocolate and blend.
3.The mixture is ready when everything sticks together and forms a big ball.
4.Take a little piece of the mixture and shape it into an oval with a pointy top. Continue until you have used all the mixture.
5.Crumble the chocolate into a bowl and place it over a pot with boiling water (the bowl shouldn't be touching the hot water!), creating a bain-marie. Wait for the chocolate to almost melt and remove from the heat.
6.Alternatively, melt the chocolate in a microwave. Add the chocolate in a bowl, cover with clean film or a plate and add in the microwave for 30 seconds at 800w. Remove, check if it has melted, if not add for additional 30 seconds. Be careful not to burn the chocolate.
7.Add one by one the melomakarona into the chocolate and place carefully on a parchment paper to set.
8.Before the chocolate sets, add a pinch of the mixed nuts on top of each biscuit.

Notes:
*The shape is optional, you can just make them into small balls.
*You can skip the chocolate part.
*Store them in the fridge for up to 2 weeks or at room temperature for up to 5 days.
