Quick and delicious pasta dish!
Vegan, nut free | Serves 2 | MAIN
Ingredients:
- 250g penne
- 2 cloves of garlic
- 100g of tomato passata
- 1 tablespoon of tomato paste
- 2 roasted peppers, from jars
- 1 red chilli
- 1/2 teaspoon of each oregano, chilli flakes
- Salt and pepper
Steps:
1.Boil the pasta according to the package instructions in salted water.
2.In a blender, add all the remaining ingredients and blend until smooth.
3.Once the pasta is cooked, drain and keep a little bit of the pasta water.
4.Add the sauce and pasta back in the pot, on a high heat for 3-4 minutes and add pasta water if it gets dry.
5.Serve with cheese of choice and arugula.
