Pop quinoa chocolate bars

If you follow me on social media, you already know my Sunday ritual: weekly meal prep! I'm thrilled to launch a brand-new series where I'll be sharing one favourite recipe from my prep menu each week. To kick things off on a high note, we're diving straight into these irresistible, easy chocolate bars!

Ingredients:

  • 340g dark chocolate (I used 70%)
  • 70g dried cranberries
  • 35g pumpkin seeds
  • 50g peanut butter
  • 50g pop quinoa
  • Pinch of salt

Steps:

1.Start with the chocolate. To melt it, crumble the chocolate into a bowl and place it over a pot with boiling water (the bowl shouldn't be touching the hot water!), creating a bain-marie. Reduce the heat and wait for the chocolate to melt and remove from the heat.

2.Alternatively, melt the chocolate in a microwave. Add the chocolate in a bowl, cover with clean film and add in the microwave for 30 seconds at 800w. Remove, check if it has melted, if not add for additional 30 seconds. Be careful not to burn the chocolate.

3.While the chocolate is melting, roughly chop the dried cranberries and pumpkin seeds, this is an optional step.

4.Once the chocolate is ready, stir in the peanut butter and whisk until is fully dissolved into the chocolate.

5.Add in the chopped cranberries, pumpkin seeds and pop quinoa, along with a pinch of salt and mix well to combine.

6.Add into a mould or a tray lined with parchment paper, then place in the fridge to set for a couple of hours.

7.Remove from the mould or tray, cut and enjoy!

Notes:

*You can adjust the sweetness to your preference; by adding some maple syrup in the mixture or other sweetener of choice or you could use a chocolate with a lower % of cocoa.

*Store in an air-tight container in the fridge for up to 10 days.
