Today we are making Pesto Cauliflower Bites! These bites are perfectly roasted until golden and tender, then tossed in a vibrant, herby pesto that packs a punch of flavour in every mouthful. Whether you serve them as a crowd-pleasing appetizer or as a zesty side dish to your favourite main, they are guaranteed to be a hit. Plus, they are vegan and gluten-free, making them an easy and healthy addition to any meal!
Vegan, gluten free, soy free | Serves 2 |SIDE
Ingredients:
- 500g cauliflower
- 2 tablespoons olive oil
- Salt and pepper
- 1 teaspoon garlic granules
- 1 tablespoon cornflour
- 2 tablespoons pesto
- Juice of half lemon
- 1 tablespoon nutritional yeast

Steps:
1.Cut the cauliflower florets and stem into bite size pieces.
2.Add them in a large bowl, drizzle the oil, add season with salt and pepper.
3.Then add the cornflower and mix well.
4.Place the cauliflower pieces on a baking tray on a single layer and bake in a preheated oven at 180°C for 25-30 minutes, turning halfway through.
5.In the meantime, in a large bowl, combine the pesto, lemon juice and nutritional yeast and once the cauliflower pieces are baked, add them in and mix them in the pesto sauce.

*You can serve them on a plate with a generous layer of hummus, top it up with some quinoa or bulgur and then add the cauliflower on top.
