One-pan tomato and plant-based mince gnocchi

Everything cooks in just one pan, meaning less cleanup and more time to enjoy your evening. It’s a rich, savoury dish that’s perfect for those busy nights. Whether you're cooking for the family or just yourself, this recipe makes for a satisfying, hearty meal that comes together in no time!

Vegan, nut free | Serves 2 | MAIN

Ingredients:

  • 1 red bell pepper
  • 1 carrot
  • 1 onion
  • 1 clove of garlic
  • 3 sun dried tomatoes
  • 3 tablespoons olive oil
  • 200g plant-based mince (I used the one from Vegini)
  • 1/2 tablespoon of each oregano, paprika, chilli flakes, garlic granules
  • 1 heaped teaspoon tomato paste
  • 1 bay leaf
  • 500g gnocchi
  • 2 tablespoons nutritional yeast
  • Fresh parsley or coriander leaves

Steps:

1.Cut the pepper, carrot and onion into small pieces and mince the garlic.

2.In a wide pan, on a medium heat, add the vegan mince, along with half of the oil and sauté for few minutes.

3.Then add the chopped veggies, the remaining oil and a generous pinch of salt and sauté until the onions become translucent.

4.Then add the minced garlic along with the spices and sauté for a minute.

5.Then add the sun dried tomatoes and tomato paste and sauté for a minute.

6.Add 400ml of water and simmer for 15 minutes, stirring occasionally.

7.Add the gnocchi along with 200ml of water and cook for 2-3 minutes.

8.Finish with nutritional yeast and some fresh herbs.

Notes:

*You can prepare the mince in advance and store it in the fridge for few days, and add the gnocchi when you are ready to enjoy.
