I've transformed this classic Greek favourite with tender, marinated mushrooms, perfectly seasoned and grilled to create a satisfyingly meaty texture. Served in warm pita bread with fresh toppings and creamy vegan tzatziki, this recipe is a flavour explosion you won't want to miss.

Ingredients:
- 450g oyster mushrooms
- 1/2 onion
- 1 glove of garlic
- 1 teaspoon of each garlic granules, chili flakes, oregano, smoked paprika and dried parsley
- Salt and pepper
- 2 tablespoons liquid smoke
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- 3 tablespoons olive oil

Steps:
1.Tear apart the oyster mushrooms with your hands into thin strips.
2.Cut the onion and into thin slices.
3.Make the marinade by mixing the remaining ingredients into a large bowl, then add the mushrooms, onion and garlic and mix everything well.
4.Let it marinade for at least 30 minutes or overnight.
5.Spread the mushroom mixture into a baking tray, lined with parchment paper, on a single layer.
6.Bake in a preheated oven at 180°C for 25 minutes, turning half way through.
7.Once the mushrooms are ready, toast the pita, spread some hummus or tzatziki, add the mushroom mixture, some of the fresh veggies and serve.
