Quick and delicious lentil and beetroot salad.
Vegan, gluten free, nut free, soy free | Serves 1 | SALAD
Ingredients:
- 1x 230g green lentils (drained weight), drained and washed
- 1 steamed beetroot, cut in cubes
- 30g vegan feta cheese (I used Violife just like feta), cut in cubes
- 3-4 cherry tomatoes, cut in half
- Handful of salad leaves
For the dressing:
- 3 tablespoons of olive oil
- 1 tablespoon of balsamic vinegar
- 1 teaspoon of maple syrup
- Pinch of salt, pepper, garlic granules, oregano and dried parsley
Steps:
1.Place all the ingredients in a bowl.
2.In a jar add all the ingredients for the dressing and shake well to combine.
3.Pour the dressing over the salad and combine.
