Energy balls

These are the ultimate guilt-free treat! Made with just rich Medjool dates, crunchy nuts, and raw cacao powder, they have a decadent, fudgy texture that tastes exactly like a brownie bite. They take minutes to whip up and are the perfect natural energy boost for those busy afternoons.

Vegan, gluten free, refined sugar free | 10-12 balls | SNACK

Ingredients:

  • 200g medjool dates, pitted
  • 100g unsalted nuts of your choice (I used mix nuts here)
  • 2 tablespoons of cocoa powder
  • Pinch of salt

Steps:

1.Preheat your oven to 180°C and on a baking tray line a parchment paper and bake the nuts for few minutes until golden or sauté them in a pan for a few minutes.

2.Pulse the nuts in a food processor until nicely crushed.

3.Then add the rest of the ingredients and blend. The mixture is ready when everything sticks together and forms a big ball.

4.Add the mixture in the fridge to cool for 20-30 minutes and then shape into balls.

Notes:

*Store in the fridge and consume within 10 days.

*If your dates are very dry soak them in boiling water for few minutes before blending.

*I also tried this recipe with hazelnuts and walnuts, but they will work with any nuts.
