Easter double chocolate cookies

If you’re looking for a fun holiday activity to do with the kids, these are it! These double chocolate cookies are soft, fudgy, and made with simple pantry staples you likely already have. The best part? Pressing a chocolate egg into the center of each warm cookie to create a sweet little "nest." It’s a mess-free, high-reward recipe that creates memories and delicious snacks in under 30 minutes!

Ingredients:

Dry:

  • 300g plain flour
  • 30g row cacao powder
  • A pinch of salt
  • 60g soft brown sugar
  • 140g white sugar
  • 1/2 teaspoon of each baking powder & bicarbonate soda

Wet:

  • 100ml plant-based milk
  • 70g coconut oil
  • A splash of vanilla
  • 60g peanut butter
  • 70g 70% dark chocolate, chopped

Decorate with:

  • Few small plant-based chocolate eggs

Steps:

1.Preheat the oven at 200°C.

2.Add all the dry ingredients in a large bowl and whisk to combine.

3.Then add all wet ingredients (except the chocolate pieces) and mix well to combine.

4.Fold in the chocolate pieces and mix.

5.Then scoop out cookie dough and place it on a tray lined with parchment paper.

6.Shape then into approximately 5cm diameter disks and flatten then.

7.Bake for 8-9 minutes, then remove from the oven and while they are still warm, place a chocolate eggs on each cookie.
