Cherry chia pudding

Cherries are in season and I couldn't resist using them in my favourite summer breakfast, chia pudding. It's refreshing, delicious, nutritious and with less than 5 minutes prep you can have breakfast for 4 days.

Vegan, nut free, gluten free | Serves 4 | BREAKFAST

Ingredients:

  • 250g cherries
  • 300ml plant-based milk
  • 70g plant-based yogurt
  • 1 tablespoon maple syrup
  • 8 tablespoons chia seeds

Serve with:

Steps:

1.Remove pits from the cherries.

2.Add the cherries in a blender along with the plant-based milk and blend until smooth.

3.Transfer the mixture in a large bowl, add yogurt and maple syrup and whisk to combine.

4.Lastly add the chia seeds and whisk well.

5.Cover and transfer in the fridge for a couple of hours or overnight to set.
