Watermelon & Feta Bruschetta
Sweet and crunchy watermelon with feta on a toasted olive ciabatta.
Vegan, nut free, soy free | Serves 2 | SIDE
Ingredients:
- 1 tablespoon of each olive oil and balsamic vinegar
- 1 teaspoon of maple syrup
- Pinch of salt and oregano
- 80g watermelon, cut in cubes
- 60g vegan feta, cut in cubes (I'm using Violife)
- 5 basil leaves, sliced
- Olive ciabatta, 4 slices
Steps:
1.Mix the olive oil, balsamic, maple syrup, salt, oregano and basil.
2.Add the watermelon and feta cubes in the dressing to marinate.
3.Toast the ciabatta.
4.Add the cubes and dressing on the toasted ciabata and enjoy!
