Tofu cigars

Crunchy, cheesy and delicious tofu cigars that are perfect as an appetiser.

Vegan, nut free | 24 cigars | SIDE

Ingredients:

For the filling:

  • 280g firm tofu (I used Tofoo)
  • 200g cream cheese (I used Violife original flavour)
  • 1 teaspoon of garlic paste or 1 clove of garlic
  • 1/2 teaspoon of each oregano, chilli flakes, dried parsley
  • 2 tablespoons of nutritional yeast
  • Salt and pepper

To assemble:

  • 12 filo pastry sheets (250g)
  • Olive oil
  • Sesame seeds

Steps:

1.In a food processor crumble the tofu in chunks and pulse for few seconds to break into small pieces.

2.Add the rest of the ingredients and pulse until everything is combined well. Add the mixture in a bowl. Taste the seasoning and adjust to your preference.

3.Preheat your oven to 180°C and lined a baking tray with some parchment paper.

4.Stack the filo sheets on top of each other and cut them in four rows that are approximately 3cm wide across.

5.Keep two sheets of filo pastry at a time and add the rest under a damp towel, so they don't get dry.

6.Use a brush to sprinkle some olive oil on one side, then stack the second sheet on top and sprinkle some more olive oil.

7.Add a teaspoon or so of the filling in the middle and top of your sheets and fold to create a cigar.

8.Make sure that the edge of the sheet has olive oil so that it sticks. Place on the baking tray, brash with olive oil and sprinkle some sesame seeds.

9.Continue until you have used all the sheets and filling.

10.Bake for 30 minutes or until golden brown and serve with sweet chilli sauce.
