Sweet potato porridge

Creamy and delicious sweet potato porridge!

Vegan, nut free, gluten free | Serves 1-2 | BREAKFAST

Ingredients:

  • 100gr sweet potato
  • 80g rolled oats
  • 250ml plant-based milk
  • 250ml water
  • 1 tablespoon of maple syrup
  • 1 teaspoon of vanilla
  • Pinch of salt

Steps:

1.Preheat the oven at 180°C and on a baking tray line a parchment paper.

2.Bake the sweet potato for 40 minutes or until is soft.

3.Once the potato is baked, let it cool for 10 minutes, cut it in the middle and remove the flesh with a spoon.

4.In a pot add the sweet potato, along with the remaining ingredients and cook on a medium heat stirring constantly.

5.Make sure to break the potato flesh with the spoon.

6.The porridge needs 5-6 minutes to get creamy.

7.Try the sweetness and adjust to your preference.

8.Serve with seeds.
