Stir fry cabbage

Patta gobi ki subzi is an Indian side dish, made with cabbage. Today, I'll be sharing my grandam's way of cooking it!

Vegan, nut free, soy free, gluten free | Serves 5 | SIDE

Ingredients:

  • 800g cabbage
  • 80ml olive oil
  • 1/2 teaspoon of each turmeric and curry powder
  • 1/3 teaspoon garlic granules
  • Chilli, fresh or dry
  • 1/2 teaspoon dry parsley
  • 1 veggie cube
  • 1 teaspoon tomato paste
  • Salt and pepper

Steps:

1.Chop the cabbage.

2.In a pot, on a high heat, add the oil, followed by the cabbage. Stir the cabbage into the oil, and cook for 10 minutes, stirring occasionally.

3.Add the spices, tomato paste and veggie cube and cook for another 15-20 minutes, stirring every now and then.

4.After 20 minutes or so, the cabbage will reduce in half.

5.Taste and adjust the seasoning to your preference. You can make it as hot as you like it or skip the chilli altogether.

6.I like to serve it with basmati rice, peas, and tofu.
