Penne arrabbiata

Quick and delicious pasta dish!

Vegan, nut free | Serves 2 | MAIN

Ingredients:

  • 250g penne
  • 2 cloves of garlic
  • 100g of tomato passata
  • 1 tablespoon of tomato paste
  • 2 roasted peppers, from jars
  • 1 red chilli
  • 1/2 teaspoon of each oregano, chilli flakes
  • Salt and pepper

Steps:

  1. Boil the pasta according to the package instructions in salted water.

  2. In a blender, add all the remaining ingredients and blend until smooth.

  3. Once the pasta is cooked, drain and keep a little bit of the pasta water.

  4. Add the sauce and pasta back in the pot, on a high heat for 3-4 minutes and add pasta water if it gets dry.

  5. Serve with cheese of choice and arugula.
