Quesadillas
Quesadillas
This recipe is perfect of a quick lunch or dinner. You can adjust everything to your liking, but this is a good base to inspire you on how to start.
Vegan, nut free, soy free | Serves 4 | SIDE
Ingredients:
- 2 tablespoons of olive oil
- 1 onion
- 1 red bell pepper
- 1 green bell pepper
- 1 clove of garlic, finely diced
- 250g flat mushrooms (or other of your choice)
- 70g of sweetcorn (frozen or from a can)
- 1 tablespoon of soy sauce
- 1/2 teaspoon of paprika
- 1/2 teaspoon of oregano
- 1/4 teaspoon of garlic granules
- 1/4 teaspoon of cumin powder
- Pinch of chilli flakes
- Salt and pepper to taste
- 4 corn tortillas
- 170g Violife grated cheese (or other of your choice)
Steps:
1.Julienne all the vegetables and in a pan on medium heat sauté the onions, garlic and peppers with the oil.
2.After a couple of minutes add the mushrooms and corn and sauté until all water has been evaporated.
3.Continue with all the spices and soy sauce and sauté for another minute. The filling is ready.
4.In a different pan, on medium heat, add a touch of oil and one tortilla, spread 2 -3 tablespoons of the filling and some cheese and cover with another tortilla on top.
5.Cook until golden brown and flip over using a spatula.
6.Alternatively, you can add a tortilla, fill half of it and cover over, shaping a semicircle (this way is easier to flip over).
7.Serve with guacamole, salsa or sour cream and enjoy hot!
