Pomegranate molasses

In Cyprus we have an abondance of pomegranate trees, so naturally I ended up with a lot of fruits as everyone is giving them away! After having some in my breakfast, salads, and pasta, I decided to make some pomegranate molasses.

Vegan, nut free, soy free | 400ml | DIP

Ingredients:

  • 8 pomegranates
  • 125g sugar
  • 125ml lemon juice

Steps:

1.Remove the seeds from the pomegranates and juice them. From 8 pomegranates, I got 930ml of juice.

2.Add the juice in a large pot, along with the sugar and lemon juice.

3.Bring to boil and lower the heat.

4.Cook for 2 hour or until the molasses has reduced, stirring occasionally.

5.Let it cool down and put it in clean jars.

6.Store it in the fridge.

Notes:

*If you don't have a juicer, you can use a food processor and then sieve the seeds out.

*You can use a store-bought juice instead, but make sure is 100% pomegranates.
