Passion fruit pancakes
The combination of passion fruit and coconut yogurt take these pancakes to another level, they are really fluffy and full of flavour!
Vegan, nut free, refined sugar free | Serves 2 | BREAKFAST
Ingredients:
Dry:
- 180g self-raising flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch a salt
Wet:
- 180ml soy milk
- 2 tablespoons coconut yogurt
- 2 tablespoons desiccated coconut
- 2 tablespoons maple syrup
- 1 teaspoon vanilla bean paste
- 1 passion fruit, fruit pulp and juice
Steps:
1.In a bowl, add all the dry ingredients and mix them well.
2.In a separate bowl, add all the wet ingredients and whisk them.
3.Add the dry into the wet and whisk to combine.
4.Let the mixture aside for 10-15 minutes (the above steps can be done up to a day in advance, just keep the mixture in the fridge).
5.Use a small ladle to scoop the mixture over a pan shaping a circle. When you start seeing small bubbles on the pancake flip it over, using a spatula.
6.Cook on a medium heat, for 3-4 minutes or until golden.
7.Serve with coconut yogurt, passion fruit, desiccated coconut, and maple syrup.
