Not your regular Caesar salad

This plant-based Caesar salad is delicious, tangy and crunchy!

Vegan | Serves 1 | SALAD

Ingredients:

  • 100g firm tofu, cut in cubes
  • Pinch of salt, pepper and garlic granules
  • 2-3 handfuls of destemmed tofu
  • 2 tablespoons sweetcorn
  • 1 teaspoon of each capers and pie-nuts
  • 3-4 cherry tomatoes
  • 30g plant-based cheese, shredded
  • 1 spring onion, sliced

Dressing:

  • 1 tablespoon olive oil
  • 3/4 plant-based mayonnaise
  • 1 teaspoon of each maple syrup, tahini and capers brine or white vinegar
  • 1/2 teaspoon of garlic granules, oregano and nutritional yeast
  • Salt and pepper

Serve with:

  • Croutons

Steps:

1.Saute the tofu cubes on a preheated, non-stick pan with a splash of olive oil. Cook until golden on each side and season with salt, pepper and garlic.

2.While the tofu is cooking, prepare the dressing my mixing well all the ingredients.

3.In a large bowl, add the kale and dressing and massage to soften a bit he kale.

4.Add the remaining ingredients and the tofu (once cooked) and enjoy with some croutons.
