Mushroom and leek pie

This delicious mushroom and leek pie has a flaky pastry and a creamy filling!

Vegan, nut-free, soy-free, gluten-free | 8 pieces | SIDE

*Use gluten free pastry and flour to make it glute free

Ingredients:

Mushroom mixture:

  • 2 tablespoons of olive oil
  • 500g of white mushrooms, sliced
  • 1 leek, chopped
  • 2 cloves of garlic, crushed
  • Salt and pepper
  • 1/2 teaspoon of each dried oregano and garlic
  • 1/2 lemon
  • A handful of fresh parsley, chopped

Bechamel sauce:

  • 1 tablespoon plant-based butter
  • 1 tablespoon flour
  • 350ml plant-based milk
  • Salt and pepper
  • Pinch of nutmeg

To assemble:

  • 850g puff pastry (2 sheets), de-frozen
  • Sesame seeds
  • 2 tablespoons of olive oil

Steps:

1.In a pan on a medium high heat, add half of the olive oil, mushrooms, and leeks.

2.Season with salt, pepper, oregano, and garlic.

3.Saute for 5-6 minutes stirring occasionally.

4.After a minute or so, add a crushed garlic.

5.Once the mushrooms are golden brown and the leeks have softened, add them in a plate and do the same process for the remaining mushrooms and leeks.

6.Once you finish with the veggies, use the same pan to make the bechamel sauce.

7.Add the butter and flour in the pan, on a medium heat and use a whisk to combine.

8.Continue by adding the milk in batches, whisking constantly to avoid any lumps.

9.After few minutes of stirring the sauce should be nice and creamy.

10.Season with salt, pepper and nutmeg and add the mushroom mixture and combine.

11.Remove from the heat and set aside to cool down.

12.To assemble the pie, the mixture must be cold.

13.Preheat your oven at 180°C and spread some olive oil in your pan (I'm using a 23x33cm pan).

14.Add the first sheet of the pastry, spread in an even layer the mushroom mixture and cover with the second sheet.

15.Roll the sides in and if you have a lot of extra pastry cut it off.

16.Spread some olive oil on top, sprinkle some sesame seeds, score the pie in 8 pieces, and bake for 50 minutes or until golden.

17.Let it cool down a bit, before you cut it.

18.Enjoy hot or cold and serve with some salad to have a complete meal.
