Meatballs in tomato sauce

Delicious and comfort food from my childhood, veganized!

Vegan, nut free, soy free | Serves 3 | MAIN

Ingredients:

Potatoes:

  • 200g of potatoes, peeled and cut in cubes
  • 1 tablespoon of olive oil
  • Salt and pepper
  • 1/2 teaspoon of oregano

Meatless balls:

  • 420g plant based mincemeat (I used Richmond meat free sausages)
  • 1 tablespoon of tomato paste
  • 2 cloves of garlic, crushed
  • 1/2 teaspoon of curry powder
  • Pinch of pepper

Sauce:

  • 1 tablespoon of olive oil
  • 1 onion, finely sliced
  • 1 clove of garlic, crushed
  • 1/2 teaspoon of each curry powder, chili powder and oregano
  • Salt and pepper
  • 1 tablespoon of tomato paste
  • 400g peeled plum tomatoes
  • 1 bay leaf
  • 4-5 green finger chilis

Rice:

  • 1 tablespoon of olive oil
  • 240g of basmati rice
  • Pinch of salt

Steps:

1.Preheat the oven at 180°C.

2.In a baking tray add the potatoes, herbs and olive oil, mix well and bake for 30 minutes, turning halfway through.

3.In a bowl, add the mincemeat (if you are using sausages, remove the skin), tomato paste and all the herbs and mix well.

4.Once everything is well combined, shape them into balls (try to keep the same size, so they cook at the same time) and set aside.

5.For the sauce, in a wide pot/pan on a medium heat, add the olive oil and sauté the onions until translucent.

6.Add the garlic and sauté for a minute, before adding the spices. Sauté for another minute, to release their aromatics and add the tomato paste.

7.Stir around and add the plum tomatoes. Break them with a wooden spoon and add the bay leaf and finger chilis.

8.Add 100ml of boiling water, bring to boil and lower the heat.

9.The potatoes must be ready by now, add them as well. Stir around, and then add the meatless balls one by one, on a single layer. Cover and simmer for 20 minutes, stirring occasionally.

10.In the meantime, prepare the rice. In a small pot, on a medium heat, add the olive oil, rice and pinch of salt. Stir to coat the rice in the olive oil and add 480ml of boiling water, stir, bring to boil and lower the heat. Cover and cook for 10 minutes.

11.After 10 minutes, all the water must be evaporated, and the rice should have been cooked.

12.Once everything is cooked serve hot and enjoy!
