Mahalepi

Mahalepi, is a dessert from my childhood, I remember eating this during the hot summer days here in Cyprus. A very simple dessert, that carries a tone of memories!

Vegan, nut free, gluten free, soy free | Serves 4 | DESSERT

Ingredients:

  • 50g maze powered starch
  • 1L water
  • 30g sugar

Serve with:

  • rose squash
  • rose water
  • cold water

Steps:

1.In a large mixing bowl, add the maze powdered starch along with half of the water.

2.Whisk well to combine.

3.Transfer the mixture into a pot, and add the remining water.

4.Cook on a medium heat, stirring occasionally.

5.After few minutes, add the sugar and mix to dissolve.

6.Mahalepi is ready when it starts bubbling up (it needs approximately 10-15 minutes).

7.Devide the mixture in 4 individual bowls and let it cool down at room temperature, before you add it in the fridge.

8.Let it in the fridge to set overnight.

9.When you are ready to server, transfer into a wider bowl and add rose squash, rose water and cold water. Some people add ice cubes too!

Notes:

*You can also add it a one big Pyrex, instead of individual bowls.

*I'm not adding measurements for the rose squash and water, as you can make it as sweet as you wish.

*When you serve it, you can add some extra sugar too.

*Keep in the fridge for up to 5 days.
