Loaded potato skins

Delicious loaded potato skins!

Vegan, nut free, gluten free | Serves 5 | MAIN

Ingredients:

  • 5 medium size jacket potatoes
  • Salt and pepper
  • 4 tablespoons of olive oil
  • 3 tablespoons of sweet corn
  • 2 tablespoons of cream cheese
  • 3 spring onions, sliced
  • 1 teaspoon of each garlic granules, oregano and dried parsley
  • 100g vegan cheese (I used Violife epic mature), grated
  • 100g vegan bacon (I used Vivera plant bacon pieces), optional
  • Fresh parsley to serve

Steps:

1.Preheat your oven at 180°C.

2.Wash the potatoes very well, pierce with a fork few times, add on a piece of foil and a splash of olive oil, salt and pepper and rub them well.

3.Fold each potato in a piece of foil and place them on a baking tray.

4.Bake for 45-60 minutes or until the potatoes are soft.

5.Remove the potatoes from the foil and let them cool down for at least an hour or refrigerate overnight, so you can handle them.

6.In you are using bacon, fry it now.

7.Cut the potatoes in the middle, lengthwise. Scoop out the inside of the potato, leaving a thin layer (0.5cm) inside.

8.Season the potato shells and add a splash of olive oil. Broil them for 10 minutes.

9.Add the scooped potato in a bowl, with 1 tablespoon of olive oil, the cream cheese, sweet corn, spring onions, bacon pieces and all the spices.

10.Mash the potatoes and mix everything well.

11.Taste to adjust the seasoning to your preference.

12.Add the potato mixture inside your potato shells, add some of the bacon on top and grated cheese.

13.Place back the loaded potatoes in your baking tray and bake until the cheese has melted.

14.Sprinkle some fresh parsley on top and serve with a salad of your choice.
