Lentil and beetroot salad

Quick and delicious lentil and beetroot salad.

Vegan, gluten free, nut free, soy free | Serves 1 | SALAD


  • 1x 230g green lentils (drained weight), drained and washed
  • 1 steamed beetroot, cut in cubes
  • 30g vegan feta cheese (I used Violife just like feta), cut in cubes
  • 3-4 cherry tomatoes, cut in half
  • Handful of salad leaves

For the dressing:

  • 3 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon of maple syrup
  • Pinch of salt, pepper, garlic granules, oregano and dried parsley


  1. Place all the ingredients in a bowl.

  2. In a jar add all the ingredients for the dressing and shake well to combine.

  3. Pour the dressing over the salad and combine.
