Lemon courgette gnocchi

Today, I'll show you one of my top favourite summer recipes: lemon courgette gnocchi. It's a vibrant dish with a kick from the chili flakes, that I'm hoping to be making soon with my homegrown courgettes!

Vegan, nut free, soy free | Serves 1 | MAIN

Ingredients:

  • 300g courgette
  • 1 spring onion
  • 1 clove of garlic
  • 2 tablespoons olive oil
  • Salt and pepper
  • A pinch of oregano and chili flakes
  • 60ml of white wine
  • 300g gnocchi
  • 1/2 lemon, juice
  • Plant-based cheese, grated
  • A handful of wild arugula

Steps:

1.Slice the courgette, onion and garlic.

2.In a wide pan, add the olive oil and onion with a pinch of salt and sauté for a couple of minutes.

3.Then add the garlic and courgette and sauté on medium heat, for 6-7 minutes.

4.Season with salt, pepper, oregano and chili flakes.

5.Once the courgettes, have caramelized, deglaze with the white wine and cook it off for a couple of minutes.

6.In the meantime, cook the gnocchi in salted boiling water for 3-4 minutes or until the float.

7.Once the gnocchi are cooked, add them into the pan, along with a bit of the cooking water (around 50ml) and stir everything together.

8.Finish with the lemon juice, cheese and arugula and serve.
