Harissa balls pasta

This February, I'm starting a new pasta series, where I'll be sharing some of my favourite comforting pasta recipes with you! We kick off the series, with a delicious harissa balls pasta in red sauce served with linguine.

Vegan, nut free | Serves 2 | MAIN

Ingredients:

  • 1 onion
  • 2 cloves of garlic
  • 1/4 of parsley bunch
  • 200g plant-based mince meat
  • 2 tablespoons of harissa paste
  • salt and pepper
  • 1/2 teaspoon dried oregano
  • 3 tablespoons olive oil
  • 1 teaspoon tomato paste
  • 100g tomato passata
  • 200g linguine
  • 2 tablespoons of nutritional yeast

Steps:

1.Chop the onion, grate the garlic and cut the parsley.

2.In a bowl, add the plant-based mince, half of the minced garlic, the chopped parsley, half of the harissa paste, 1 tablespoon of olive oil, and season with salt, pepper and oregano.

3.Mix well to combine and roll 10 balls.

4.In a wide pan, add the remaining olive oil, and sauté the veggie balls on a medium heat until they get a nice colour on all sides.

5.Remove the balls from the pan, then add the onions and sauté them with a pinch of salt and once they are translucent add the minced garlic.

6.Sauté for a minute, then add the tomato paste and remaining harissa paste and cook it for a minute or two before you add 250ml of water.

7.Add the tomato passata, season with salt, pepper and oregano and add back the balls.

8.Lower the heat to medium low, partially cover the pan and simmer for 10 minutes.

9.Cook the linguine in salted water, and once the pasta is al-dente add them into the pan.

10.Finish with some nutritional yeast and optionally add some vegan cheese.
