Green apple salad

Complete your Easter spread with the vibrant freshness of my Green Apple Salad! This simple salad delivers a delightful combination of crispness, a perfect hint of zing, and a satisfying crunch that makes it the ideal accompaniment to any dish on your festive table.

Vegan, nut free, soy free, gluten free | Serves 4 | SALAD

Ingredients:

Dressing:

  • 120ml olive oil
  • 60ml apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon maple syrup
  • 1 garlic clove, grated
  • Salt and pepper
  • 1/2 teaspoon oregano
  • 1/4 teaspoon chili flakes

Salad:

  • 1 bunch of spinach
  • 1 bunch of lollo rosso lettuce (or other lettuce of choice)
  • 1 cucumber
  • 1 spring onion
  • 1 green apple

Serve with:

  • 2 tablespoons pumpkin seeds

Steps:

1.In a jar add all the dressing ingredients, cover and shake well to combine.

2.Cut all the salad ingredients and place them into a large bowl.

3.Then add few tablespoons of the dressing, the pumpkin seeds and mix gently to combine.

Notes:

*Store the remaining dressing in the fridge for up to 10 days.
