Vegan, nut free, soy free, gluten free | Serves 4 | SALAD
Ingredients:
Dressing:
- 120ml olive oil
- 60ml apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon maple syrup
- 1 garlic clove, grated
- Salt and pepper
- 1/2 teaspoon oregano
- 1/4 teaspoon chili flakes
Salad:
- 1 bunch of spinach
- 1 bunch of lollo rosso lettuce (or other lettuce of choice)
- 1 cucumber
- 1 spring onion
- 1 green apple
Serve with:
- 2 tablespoons pumpkin seeds
Steps:
1.In a jar add all the dressing ingredients, cover and shake well to combine.
2.Cut all the salad ingredients and place them into a large bowl.
3.Then add few tablespoons of the dressing, the pumpkin seeds and mix gently to combine.
