Greek salad or horiatiki as we call it in Greece, is a must during the summertime. If you want to make a Greek feast you definitely need to include this one!
Vegan, nut free, soy free, gluten free | Serves 4 | SALAD
Ingredients:
- 1/2 large cucumber or 1 small, cut in halfmoons
- 2 vine tomatoes, cut in squares
- 80g of vegan feta (I used Violife)
- 1 tablespoon of capers
- 10 kalamata olives
- 1/2 red onion, cut in in rounds
- 5-6 mint leaves
Dressing:
- 2 tablespoons of olive oil
- 1 tablespoon of white wine vinegar
- Pinch of dried oregano
- Salt and pepper
Steps:
1.Add all the ingredients in a bowl. In a jar combine the dressing ingredients and add it to the salad.
2.Combine and enjoy!
We had it with tzatziki, Greek tomato fritters and aubergine rolls!
