Greek salad aka horiatiki

Greek salad or horiatiki as we call it in Greece, is a must during the summertime. If you want to make a Greek feast you definitely need to include this one!

Vegan, nut free, soy free, gluten free | Serves 4 | SALAD

Ingredients:

  • 1/2 large cucumber or 1 small, cut in halfmoons
  • 2 vine tomatoes, cut in squares
  • 80g of vegan feta (I used Violife)
  • 1 tablespoon of capers
  • 10 kalamata olives
  • 1/2 red onion, cut in this rounds
  • 5-6 mint leaves

Dressing:

  • 2 tablespoons of olive oil
  • 1 tablespoon of white wine vinegar
  • Pinch of dried oregano
  • Salt and pepper

Steps:

  1. Add all the ingredients in a bowl. In a jar combine the dressing ingredients and add it to the salad.

  2. Combine and enjoy!

We had it with tzatziki, Greek tomato fritters and aubergine rolls!
